All American Parsnip Planting Instructions:

1. When to Plant: Parsnips require a long growing season. Sow outdoors in early spring as soon as the soil is workable and not frozen. For a late fall harvest that you can "overwinter," sow again in mid-summer.

2. Preparation: These roots love to go deep! You must double-dig your garden bed to at least 12 inches, removing all rocks, sticks, and hard clumps. If the root hits a rock, it will "fork." Work in plenty of organic compost, but avoid fresh manure which can cause hairy roots.

3. Sowing: Sow seeds 1/2 inch deep. Parsnip seeds are notoriously slow and "fussy" to sprout. The secret is to keep the soil surface constantly moist. If the soil crusts over, the tiny sprout won't be able to break through. Many gardeners "sand" the row or use a light mulch to keep it damp.
