(Non-GMO, Heirloom)
Pak Choi, a staple member of the Chinese cabbage family, is one of the most popular and versatile Asian greens in the world. It is prized for its beautiful contrast of thick, crunchy white stalks and smooth, dark green leaves. At The Seed Guy, we recommend Pak Choi to every gardener because of its remarkable speedβit is often one of the first vegetables ready for harvest in the spring and one of the last to thrive in the fall. Whether you are a beginner or a seasoned pro, this heirloom is a reliable producer that adds a gourmet touch to any meal.
The flavor is mild and slightly sweet, making it the perfect base for stir-frys, soups, and fresh salads. Any vegetable that can go from seed to table while providing both a stunning visual and incredible flavor is a gardener's dream, and Pak Choi is a nutritional powerhouse packed with Vitamins A, C, and K. Because it is exceptionally cold-hardy, it can withstand light frosts, which often makes the stalks even sweeter and more succulent.

Pak Choi Planting Instructions:
1. Timing: Pak Choi thrives in cool weather. Plant in early spring as soon as the soil can be worked, or sow in late summer for a fall harvest. It can also be grown in partial shade to prevent it from "bolting" in warmer weather.
2. Sowing: Sow seeds 1/4 inch deep directly into the garden. Space seeds about 2 inches apart and thin to 6-12 inches once they are established, depending on whether you want "baby" or full-sized heads.
3. Care: Pak Choi needs consistent moisture to keep the stalks crisp. If the soil dries out, the plant may go to seed prematurely. Rich, well-draining soil with plenty of organic matter will produce the best results.
4. Harvesting: You can harvest individual outer leaves as needed for "cut-and-come-again" harvesting, or cut the entire plant at the base once the head has reached your desired size.
5. Pests & Disease: Watch for flea beetles and cabbage loopers. Using lightweight row covers is an excellent way to keep the leaves pristine and free of pests.
